Thank you Jamie for another brilliant vegetarian (can be made vegan) recipe, you could make the tomatoes and capsicums the day before and bake the potatoes and heat the sauce, by doing this (as you well may already know…) allows the tomato and bean mix to 'mature' and have more intense flavors. I would also consider serving it with a serving of guacamole or plain avocado, the taste and texture of the whole meal would be so good (and very healthy)

  2. Heavens Jamie, why not wash the rice before cooking? It's the secret to fluffy, separate grains. Your rice was all stuck together, a fork through just gives you smaller lumps, still stuck together, yuck. It takes less than a minute to rinse the rice, swirl it around a few times in warm water to loosen the starch before cooking. Makes all the difference.. you're welcome.
