This is my favorite Mexican American plate lunch. It’s US style rather than what might be served in Mexico so it is sour cream not crema and there’s probably some orange cheese In the food too.
I used to work with a Chinese chef that explained there was American Chinese food like sweet and sour, orange chicken, Kung Pau. He said it was not authentic Chinese but it could be delicious if it was done well. He thought there was something to authenticity but what he personally cared about was food tasting really good.
Personally I much prefer the saucy New Mexican style enchiladas with just New Mexican chilli pods and I think that’s an old regional specialty. I think that makes it kind of authentic, just not what they serve in Sonora or Chihuahua.
