Pasta: 150-200g Penne, Fusilli, or your choiceFor the Roux: 2 tbsp Butter, 2 tbsp All-Purpose Flour (Maida)For the Sauce: 2 cups Milk, 1/4 cup grated Parmesan Cheese, Salt, Black Pepper, Oregano, Chilli Flakes, garlicOptional Veggies: Broccoli, bell peppers, corn, mushrooms, zucchini 

Instructions

Cook Pasta: Boil pasta in salted water until al dente, reserve some pasta water, then drain.Sauté Veggies (Optional): In a pan, sauté your chosen vegetables (garlic, onions, broccoli, capsicum) in a little butter or oil until tender-crisp, then set aside.Make the Roux: Melt butter in the same pan, add flour, and whisk constantly for 1-2 minutes until it smells nutty (to cook out the raw flour taste).Add Milk: Slowly whisk in milk (warm or cold works, but add slowly to avoid lumps) until smooth, then cook until the sauce thickens.Season & Cheese: Stir in Parmesan, salt, pepper, oregano, and chili flakes.Combine: Add the cooked pasta and sautéed vegetables to the sauce, tossing to coat.Serve: Garnish with fresh basil or parsley and serve immediately.
