4 Family Dinners Using 1 Whole Chicken 🍗
Recipe Number 4: Roasted Red Pepper & Tomato Spaghetti 🍝
Ingredients:
350g Tomato
2 Red Bell Peppers
1 Red Onion
4 Garlic Cloves
3tbsp Olive Oil
1tsp Basil
1tsp Oregano
200g Cooked Chicken
1 Vegetable Stock Cube
1 Cup Pasta Water
230g Spaghetti
100ml Single Cream
Method:
Add the tomato’s, onion and pepper to a roasting tray, drizzle over the oil and sprinkle on the seasonings then combine.
Pop in the oven for 20 minutes.
When that’s nearly finished add the spaghetti into boiling salted water and cook to the packets instructions.
Add the roasted veg to a pan and blend until smooth.
Break up a vegetable stock cube into the sauce and then add a cup of pasta water and then the chicken and combine, cook for 5-10 minutes until the chicken is warmed through completely.
Drain the spaghetti and add to the sauce and then pour in the cream and combine.
