EASY White Bean and Chicken Chili | High Protein Dinner ⭐️

When it’s cold outside, not much sounds better than a warm bowl of this satisfying white bean and chicken chili. With healing spices and shredded chicken, this chili is much lighter than the beef-and-pinto-bean variety, more like a satisfying Mexican soup.

For the chicken, I love to use a whole smoked chicken from a nearby BBQ restaurant (which is very easy to find in Texas! 🤠). The smokey flavor from the chicken infuses the entire dish in the best way. If that’s not an option though, a rotisserie from the grocery store will work, too. Can’t wait for you to try this one!

White Bean and Chicken Chili

INGREDIENTS:
2 Tablespoons butter
1 medium onion, chopped
3 cloves garlic, minced
1 quart (32 oz.) chicken stock
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 – 3/4 cup mild chopped green chilies
2 (15.5 oz.) cans navy beans, drained and rinsed
3 – 4 cups shredded chicken
2 Tablespoons fresh lime juice
1/4 – 1/2 cup sour cream
Salt and pepper
Garnishes: grated cheese, fried tortilla strips, avocado, sour cream, cilantro, lime wedges

INSTRUCTIONS:
Melt butter in a large pot over medium heat. Add onions; cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
Reduce heat to medium-low. Add chicken stock, cumin, coriander and chilies. Simmer for 15 minutes.
Add beans, shredded chicken, and lime juice. Simmer 5 minutes more.
Reduce heat to low. Add sour cream; stir until smooth. Taste, adjust seasonings if needed, and serve. Top with grated cheese, fried tortilla strips, avocado, cilantro, and lime.

  1. Just love chicken chili but never thought about adding lime juice, fried tortillas or sour cream to it. I have some smoked salt I usually use to bake my chicken for the chili but getting it from a bbq place would be great idea too. Also adding turmeric and/or lemon juice to homemade chicken broth would be wonderful with all the cold weather we are having across the country this weekend. Hope you are not impacted by these storms and love to Coco Puff, Gracie, Rabbit and cat too…

    I am anxious to try this chili. My tummy doesn't always like tomato, so this makes more sense.
    If you don't have sour cream couldn't you use Greek yogurt?

  4. I just came in from shoveling over a foot of snow and this looks aMAZing 🙂 I make white chicken chili with much of the same ingredients you use, but I've always used cannellini beans. I'll have to try the navy beans next time – or maybe both. Thanks Marie!

  5. Will definitely be making this sometime in the next week or so…looks amazing. I don't recall seeing smoked chickens available in my area of Ohio, but I'll keep my eyes open. I'm sure rotisserie chicken will be terrific. Thanks and blessings!

  8. Our grocery stores in Arizona carry the small cans of Hatch diced chilies. Mild or hot. I always keep a few cans in my pantry.
