



I made beef kofta inspired taquitos with the red sauce I made the other day.
I chopped half a white onion, a bunch of cilantro, a few cloves of garlic and added it to ground beef. I put that mixture in a food processor with a chili tomato paste that I made earlier to mix together.
I spread the meat onto corn tortillas rolled them up and baked for about 20 minutes.
More than a few had a blow out so I will have to rethink how tightly I rolled them up. Otherwise, it turned out rather well for an idea that tumbled thru my head.
