1/2 cup mango
1/2 cup red bell pepper
1/8 cup red onion
1/2 cup rice or quinoa
1/2 cup hot honey chicken
1/8 cup cilantro
avocado + drizzle hot honey when serving
DRESSING:
juice of 2 limes
salt & pepper to taste
drizzle of hot honey
CHICKEN:
6 chicken thighs
1 tbsp trader joe’s crunchy chili onion
1 tbsp chili powder
1 tsp each: smoked paprika, cumin, garlic powder
drizzle hot honey
salt & pepper to taste
*broil at 500 for approximately 8-12 mins
