Skillet Peppers and Potatoes



This is one of those simple recipes that inevitably becomes a family favorite, especially for brunch. The recipe suggests bell peppers, but when there are different peppers available, you can replace the bell peppers with sweet banana peppers, gypsy peppers, jalapeño, cayenne, or Calabrian chile peppers.   1. My mother used to slice potatoes and fry them in a little bacon grease for our family. They were so good, and the smells in our kitchen would wake everyone up. My grandmother would get up, start a fire, make biscuits in her old wood stove, and everyone would wake up to the smells in her kitchen!!! Appalachian home cooking!!! I love your memories, Lidia! You would have fit right in with all of us! Mom had six sisters, and they all could cook!!
