Ingredients
* 1 chicken (cut, skin removed)
* 3 cups rice
* Olive oil
Veggies & Aromatics:
* Green bell pepper
* Red bell pepper
* Onion
* ½ tomato
* Scallion
* 5 cloves garlic
* 2 red chili peppers
Seasonings:
* Seasoning salt
* Garlic powder
* Onion powder
* Thyme
* Paprika
* Allspice (pimento)
* Turmeric
* Jamaican curry powder
* Trini or Indian curry powder
* Cumin
* Black pepper
Broth:
* 2 cups hot water
* 3 chicken bouillon cubes
Prik Nam Pla Sauce:
* 3 cloves garlic
* 2 red chilies
* ¼ lemon or lime
* Thai fish sauce
* Pinch of sugar
Step 1: Clean the Chicken
Place the chicken in a bowl of water with lemon and vinegar. Let it soak while you prep the vegetables.
Step 2: Chop Your Vegetables & Herbs
For the one-pot meal:
* 1 green pepper
* 1 red pepper
* 1 onion
* ½ tomato
* 1 scallion
* 5 cloves of garlic
* 2 red chili peppers
For the Prik Nam Pla sauce:
* 3 cloves of garlic
* 2 red chili peppers
* ¼ lemon or lime
Place the 3 cloves of garlic and 2 chili peppers in a small bowl for the sauce.Place all remaining chopped vegetables in a separate bowl for the one-pot meal.
Step 3: Prepare the Chicken
Remove the skin from the chicken (if applicable), then rinse thoroughly.
Step 4: Season the Chicken
Season with:
* 1 tbsp seasoning salt
* 1 tbsp garlic powder
* 1 tbsp thyme
* 1 tbsp paprika
* 1 tbsp allspice (pimento)
* 1 tbsp onion powder
* 1 tbsp turmeric
* 2 tbsp Jamaican curry
* 2 tbsp Trini or Indian curry
* 1 tbsp cumin
* 2 tbsp black pepper
Mix well until all pieces are fully coated.
Step 5: Brown the Chicken
Heat a Dutch pot or deep pan on high heat and add olive oil.Once hot, add the chicken pieces and reduce heat to 6–7.
Brown the chicken on both sides only, do not cook through.Once browned, return the chicken to the same seasoning bowl (do not wash the bowl).Turn off the stove and remove the pan. Do not wash the pan.
Step 6: Prepare the Broth
Fill a measuring cup with 2 cups of hot water.Add 3 chicken bouillon cubes (or 1 packet of chicken bone broth bouillon).Let it dissolve.
Step 7: Wash the Rice
Wash 3 cups of rice (perfect for a family of 4 or leftovers).Set aside.
Step 8: Build the One-Pot Meal
Return the pan to the stove on heat 6–7 and add olive oil.Once hot, add all the chopped vegetables for the one-pot meal.
Sauté until lightly browned but not burned.Add the rice and stir well to combine with the vegetables.
Place the chicken into the pot, piece by piece, gently nestling it into the rice.
Pour the bouillon water into the bowl that held the chicken, swirl to collect all the seasoning, then pour it into the pot.
Let everything come to a boil.
Step 9: Cook
Once boiling, reduce heat to 2–3 (low).Cover the pot with foil, then place the lid on top to create pressure and ensure the chicken cooks thoroughly.
Optional: After 15 minutes, briefly check the pot, then re-cover and continue cooking for another 15 minutes.
Bonus Step: Now rinse the chicken bowl in the sink and clean the sink/ surrounding area to avoid bacteria spread. Then fill the sink with water, soap, 1tsp of bleach and soak all the dishes you no longer need to use. clean your sink with some soap and bleach. This will disinfect everything.
Step 10: Make the Prik Nam Pla Sauce
While the pot cooks, squeeze the lemon or lime into the sauce bowl with garlic and chilies.Let sit for 5 minutes.
Add:
* A pinch of sugar
* 6–7 tbsp Thai fish sauce
Stir and set aside.
Step 11: Optional Side Dish
For a quick veggie side, sauté snow peas with:
* 2 tbsp butter
* ½ bouillon cube
Add 1 tbsp Prik Nam Pla sauce mixed with ½ cup water.Cook for about 3 minutes until a light gravy forms.
Step 12: Final Check & Serve
After 30–35 minutes, check one piece of chicken to ensure it is fully cooked. Garnish with Scallion
Serve hot and spoon Prik Nam Pla sauce over the top. Enjoy

This is soo good everyone will want seconds! If you want a more rich taste then add 1 cup of coconut milk & 1 cup of chicken bullion broth to your one pot, instead of 2 cups of chicken bullion broth 😮💨❤
