Crispy Cabbage Paneer Bowl
(serving size ~ 1)
Protein- 25g (per serving)
Calories- 330 (per serving)
Ingredients
For the base:
Red cabbage-½ of whole (shredded)
Green cabbage-½ of whole (shredded)
Black pepper- 1 tsp
Salt to taste
Red bell pepper- ½ of whole
Low Fat Paneer- 100g
Coriander- handful
For the dressing:
Garlic- 3-4 cloves
Roasted pumpkin seeds- 1 tbsp
Dry red chilli- 2 (soaked)
Salt to taste
Light coconut milk- 100 ml
Method:
-In a bowl, add red cabbage, green cabbage, red bell pepper, oil, salt, and black pepper. Mix well.
-Air fry this veggie mix at 180°C for 10–12 minutes until slightly crisp.
-Now in a large bowl, add the air fried veggies, crumbled paneer, and coriander.
-In a jar/blender, add garlic, roasted pumpkin seeds, soaked red chilli, salt, and coconut milk. Blend into a smooth dressing.
-Pour the dressing over the salad, toss well, and enjoy fresh.
