  1. 🌶️ Recipe for 2 people:

    2 red peppers
    1 bulb garlic, peeled 10 cloves
    2 onions
    a lot of olive oil
    roast in convection oven 200 degrees 20-25 min
    salt

    Pasta of your choice for 2 persons (here: 300 g Orichiette)
    35 g cashews, previously soaked for 1-2 hours if you don't have a high-powered blender
    1-2 tbsp yeast flakes
    1 tablespoon lemon juice
    pasta water
    handful of basil

    Topping:
    piece of vegan butter
    Panko breadcrumbs
    yeast flakes to taste
    thyme
    cashews, finely chopped (ratio according to taste, slightly more breadcrumbs than cashews)

    1. Melt the butter in a pan and fry the breadcrumbs with thyme and cashews until golden brown.
    2. Heat the oven to 180 degrees.
    3. Put the peppers together with onion & garlic on a baking tray and rub everything well with olive oil. Put the tray in the oven for 20-25 min.
    4. In the meantime, cook the pasta.
    5. Put the vegetables from the oven into a blender, together with cashews, pasta water, yeast flakes, lemon juice and basil and puree everything to a fine cream.
    6. Toss the pasta in the sauce and garnish with the breadcrumbs and fresh basil.
