Chili is a comfort classic. And all I want during this Nor’easter is comfort food 🥶

This one-portion chili recipe is warm and delicious.

Chili is one of those things that I will add different ingredients to each time depending on how I’m feeling. Sometimes I won’t use a pepper, sometimes I’ll add corn. Either way the base is the same and it’s always delicious!

Here’s the recipe I used:
1/2TBSP butter
1/2 c diced onion
1/2 c diced bell pepper
1/4 lb ground beef
2 TBSP chopped green chiles
1 TBSP tomato paste
1- 1.5 c fresh tomatoes, diced
1/2 c red kidney beans

Spices I used (although you can just use a chili packet or whichever ones you prefer)
Spice Islands taco seasoning
Tony Chachere Creole Seasoning
Everything But The Elote seasoning
Garlic powder
Onion powder
Salt
Pepper

Toppings:
Cheddar Cheese
Sour Cream

Saute onions, peppers and ground beef in butter on medium. Once beef is mostly cooked, add chiles, tomato paste. Stir. Let tomato paste cook a bit. Add your desired seasonings, your beans and your tomatoes. Bring to a simmer, turn heat down and let simmer at least 20 minutes or until it’s the consistency you like. If it gets too thick, you can add a bit of water.
