Ingredients:
• 3 lb ground venison
• 1 lb hot breakfast sausage
• 3 onions, diced
• 4–8 tbsp minced garlic
• 2 tbsp Bear & Burtons W Sauce
• Heath Riles BBQ Garlic Jalapeño Rub
• 5 tbsp Heath Riles Chili Seasoning
• 2 cans Red Gold chili-ready diced tomatoes
• 2 cans Rotel
• 1 small can tomato sauce
• 1–2 diced peppers (jalapeño, poblano, or bell pepper)
• 10 oz beer (Mini Budweiser)

Directions:
1. Heat a cast iron pan over medium-high heat and add a spoonful of Bacon Up or cooking oil. Add the ground venison and sausage, breaking it up as it cooks, and brown until crumbly and about three-quarters done. Do not drain the pan.
2. Add the diced onions and cook until softened and translucent. Stir in the minced garlic and W Sauce, then season with Garlic Jalapeño Rub and five tablespoons of Chili Seasoning. Mix well and let the spices cook for about a minute to bloom.
3. Stir in the chili-ready tomatoes, Rotel, and tomato sauce until fully combined. Pour in the beer and let it simmer briefly, then add the diced peppers if using.
4. Reduce the heat to low and let the chili simmer for at least two hours, stirring occasionally. Cook until the sauce thickens, the color deepens, and the chili clings to a spoon.
