HEY #HEALTHYHUNNIES!!
In this video, we are making my dad’s famous Mexican Stew!! It’s very easy to make and perfect for this plant-based, Whole Foods, SOS-Free lifestyle! Remember, this diet is based on starches, vegetables, fruits and legumes! It is GREAT for weight loss and weight maintenance – so if you’re looking for an easy, one-pot recipe that is CHEAP – here it is! This is DELICIOUS and the whole family can enjoy it! Great for work and school lunches as well!
INGREDIENTS:
3 bell peppers
2 onions
1 package dried poblano or ancho peppers
2 cans hominy (use corn for salt-free version)
2 cans chickpeas
2 cans pinto beans
2 T paprika
2 T garlic powder
1 T cumin
black pepper to taste
1. Chop peppers and onions.
2. Add to pot with water and cook for 10 minutes.
3. Add spices and cook for 2 minutes.
4. De-seed peppers and cook for 1 minute on each side.
5. Blend peppers with 2 cups water.
6. Add blended mixture to pot, along with 3 more cups of water.
7. Bring to boil.
8. Stir, then let simmer for 40 minutes.
9. Take off heat and let sit for 40 minutes before enjoying!
