Snowmageddon is coming this weekend and I wanted to make sure I was prepared to weather the storm. After visiting 2 different grocery stores (the 1st store was sold out of chicken and the veggies I needed were gone) I finally had everything I needed to make chicken chili.
I used 1 large chicken breast that I ground up using a blender. I also used canned dark red kidney beans to cut down on prep / cooking time. Total cooking time was about 1 hour… chili needs to cook low and slow to get the best flavor. Makes about 6 – 8 servings of chili, depending on the size of your bowl.
You can substitute chicken with ground beef or ground turkey if you prefer or skip the meat and just do a vegetarian chili.
