  1. There’s so many people who believe that to make chicken wings tender you need to cook them rarer like it’s a steak, not realizing it’s the complete opposite.

    Wings are fatty and need to be taken to a high temperature for the fat to render and therefore make them tender.

    Thank you Malcom for saying wings should be taken to 200 degrees.

    I know those wings are as delicious and tender as they look.

  2. Would recommend tossing without the lid on otherwise you’ll steam that skin after you took the time to crisp it up.
