My Simple, Perfect Beef Chili

A pot of my Simple, Perfect Beef Chili is where it all starts—rich, flavorful, and classic. First, I show you the basic recipe. Then we’ll add beans if you’re into that sort of thing (all chili preferences are welcome here 😉). But then fun really begins!

This one pot of chili turns into multiple dinners AND ultimate football food: chili dogs, chili burgers, chili nachos, loaded potato skins, and more game-day favorites that disappear faster than the chips and dip. 🧀🌭🔥

Perfect for the big game on TV, feeding a crowd, or stocking your fridge with leftovers. This chili seems to get better every day! Easy, hearty, and endlessly customizable—this chili is the real MVP. 🏆

  2. Love all your recipes and your tips, you mentioned how to “dry” out mashed potatoes before mashing by leaving them on the burner and I was like mind blown 🤯 great tip for getting fluffy potatoes and I mentioned it in my last cooking video on YouTube I loved that little trick so much 😊😊

  3. Here's my recipe for Simple, Perfect Chili (both with and without beans!)

    4 lbs. ground beef

    6 garlic cloves, minced

    2 8-ounce cans tomato sauce, or 1 14-ounce can whole tomatoes with juice
    1/4 cup chili powder, plus more to taste

    1 tablespoon ground cumin

    3 tsp. dried oregano

    2 tsp. kosher salt, plus more to taste

    1/2 tsp. cayenne pepper, plus more to taste
    1/2 cup masa harina (corn flour) or regular cornmeal

    2 to 4 15-ounce cans beans (kidney and pinto), drained and rinsed (optional)

    Shredded cheddar and diced red onion, for serving

    In a large heavy pot, brown the ground beef with the garlic until it’s totally cooked. Drain off most of the excess fat, leaving a little behind for moisture and flavor.

    Add the chili powder, cumin, oregano, salt and cayenne. Stir together well. Add the canned tomato sauce or tomatoes, then fill the can twice with water twice and add. Cover the pot and reduce the heat to low. Simmer for 45 minutes to 1 hour, stirring occasionally.

    In a small bowl, combine the masa harina with 1/2 cup water and stir with a fork until smooth, then stir into the chili. Add up to 1 1/2 more cups of water depending on how saucy you like it! Let simmer for another 10 minutes to thicken. Taste and adjust the seasonings. Serve with fixings!

    If you like beans, stir them into the chili after cooking and let them simmer and heat up for 5 minutes.

  7. Years sgo, Bon Appetit had a recipe called Texican Shredded Pork that makes very good chili using ground beef and black beans. Your recipe may be almost as good.😊

  8. I decided to spoil myself a little and bought " The Pioneer Woman Cooks The Essential Recipes" cookbook. I am 60 years old, a retired teacher, and a proud cook in my home. Well, this is the best darn recipe book I own. The instructions are clear, with pictures to show you exactly what she means. If you do not know what brown butter should be, for her cookies, there are pictures showing you exactly the color it should be (the best chocolate chips cookies I have ever made!!). I can not recommend that book enough, even if you have never cooked before. 👍👍🤗

  9. I laughed when you made this with no beans. My husband swears that chili isn't chili without beans. I beg to differ, Chili comes both ways!

  10. No beans. I use crackers, corn chips or tortilla chips in my chili bowl. Not cheese or sour cream. When it comes to the onions, I mix it in with the ground beef while cooking.

  12. Yes! I’m going to try your recipe! I absolutely love chili dogs, chili cheeseburgers (my favorite) and chili topped baked taters! I like beans in the chili…just not kidney beans! 😵‍💫

  13. The chili cheeseburger reminded me of a little whole in the wall place here in my city in east Texas back in the 70's. It sold a huge triple deck cheeseburger smothered in chili. It was called the Chili Whomper Stomper and it was delicious.

  14. I sure wish I could have a big bowl of chili . Unfortunately, I don't have a bottom denture and my top one won't stay in so I'm only able to eat soft food. Maybe someday I'll be able to afford new dentures so I can eat REGULAR food again.
