Ingredients:
8 green bell peppers
1½ lbs ground beef
1 cup marinara sauce
½ cup water
3 tbsp olive oil
1 tsp mild chili powder
1 tsp ground cumin
½ tsp paprika
½ tsp dried thyme
½ tsp black pepper
1 tsp salt
1½ cups shredded cheese
½ cup fresh parsley, chopped
1 medium onion, finely chopped
1 can white kidney beans, rinsed and drained
Instructions:
🔶 Heat olive oil in a large pan over medium heat.
🔶 Add the chopped onion and sauté until soft and translucent.
🔶 Add the ground beef and cook until fully browned, breaking it up as it cooks.
🔶 Add chili powder, cumin, paprika, thyme, black pepper, and salt, then stir well.
🔶 Add marinara sauce and stir to combine.
🔶 Add the white kidney beans and mix well.
🔶 Leave a small amount of the meat mixture in the pan and set aside the rest.
🔶 Stuff the bell peppers with the remaining chili mixture.
🔶 Spoon about 1 teaspoon of marinara sauce over the top of each pepper.
🔶 Place the stuffed peppers in the pan and add water around them to prevent dryness.
🔶 Cover and cook on the stovetop for 20 minutes, until peppers are tender.
🔶 Sprinkle shredded cheese over each pepper.
🔶 Broil for 2 minutes, until the cheese is melted and lightly golden.
🔶 Finish with a sprinkle of fresh parsley and serve.
