Chilli con carne
1kg ground beef 80/20
1 chopped onion
1 chopped garlic
1 tablespoon cumin
1 tablespoon coriander seed
1 tablespoon paprika
2 dried guaillo if not 1 tablespoon chilli powder
1 cup passatta
1 cup kidney beans soaked over night or canned
1 cup of kidney bean water
85g chocolate
1. Heat up oil add onions, garlic and mince to the pan, cover with the rest of the ingredients.
2. cook on a low heat for 3-4 hours stirring occasionally. Once ready remove from the heat add the chocolate and adjust seasoning.
3. serve immediately I suggest some nice rice or a good bard potato
