This is the chili you make when “just okay” isn’t invited to dinner. Slow-simmered, deeply spiced, rich with beefy goodness and cozy heat, this homemade chili is comfort food with a backbone and a soul.

Ingredients
1 lb. ground beef
1 lb. hot sausage
3 garlic cloves
2 cans Bush’s mixed chili beans
1 onion, finely chopped
1 jalapeño, finely chopped
1 serrano, finely chopped
1 chili seasoning packet
1 small can tomato sauce
1 large can of stewed tomatoes, lightly blended
1/4 cup diced green chiles
1 tbsp. tomato paste
Your favorite seasonings: I used cayenne salt, pepper, pepper flakes, Hardcore Carnivore RED seasoning, Spiceology Smoke Junkie, Spiceology Southwest Chile powder
For serving: Shredded cheese, sliced green onions, hot sauce, sour cream, chips

Instructions
Cook the ground beef and hot sausage in a large dutch oven. If you use lean (93/7) ground beef, you won’t need to drain it. If you use have a lot of fat, remove some of it.

Once the sausage and ground beef is broken up and cooked through, add the onion, garlic, jalapeño, serranos, tomato paste, and your favorite seasonings. Stir it up and let it cook for 5 – 7 minutes.

Add the diced green chiles, tomato sauce, stewed tomatoes, and chili seasoning packet.

Stir together, cover, and cook on low for 1 – 2 hours.

Add the beans. Continue to cook another 30 minutes.

Remove from the heat. Serve with shredded cheese, sliced green onions, hot sauce, sour cream, and tortilla chips.
