Second attempt making carnitas! I feel like I have finally managed to make them taste like carnitas in mexico, much better than what I have had in London. Buying pork fat and making my own manteca made a huge difference vs buying supermarket lard. Next step is growing my own tomatillos and serranos for salsa verde and salsa de piña.
