Method
1️⃣ Marinate the Chicken In a bowl, mix chicken lollipops with crushed ginger-garlic-green chili paste, soy sauce, salt, and white pepper. Let it rest for 15 minutes.
2️⃣ Coat & Fry Combine cornflour, refined flour, salt, and crushed black pepper. Dry-coat the marinated chicken in this mixture. Half-fry in hot oil until lightly crispy, then remove and set aside.
3️⃣ Prepare the Sauce In a pan, heat butter and sauté chopped garlic, green chilies, and chili flakes until the garlic turns light golden. Add refined flour and cook for 2 minutes on low heat, stirring continuously. Gradually add milk and cream, seasoning with salt. Let it thicken on low heat. Turn off the heat and mix in grated cheese, allowing it to melt without direct heat.
4️⃣ Final Fry & Toss Re-fry the chicken lollipops until crispy. Add them to the sauce along with chopped spring onions, tossing well to coat evenly.
5️⃣ Serve Plate up these creamy, spicy lollipops and enjoy the indulgence!
