
Had some leftover flat iron steak in the freezer that I had forgotten about and was pushing a year old. It still looked to be in surprisingly good shape so I decided to make some carne asada tacos with it.
I marinated the steak with olive oil, lime juice, orange juice, onions, jalapeños, cilantro, cumin, chili powder, garlic powder, smoked paprika, and Mexican oregano.
While that was marinating for a few hours I made a batch of salsa verde using a recipe from Rick Bayless.
Blasted the steak on a piping hot griddle then chopped into small pieces. Served on blue corn tortillas with various combos chopped onions, pickled onions, cilantro, salsa verde, and Avocado salsa.
Overall turned out great, although I’d love to try this out with some skirt or hanger steak. Also looking at the picture I probably could have loaded more meat into the tacos, but it felt right at the time which is what matters I guess.
