Sweet Potato Chili – A Vegan Recipe

My sister in law made this twice. She even made a taco salad with it.

I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.

Sweet Potato Chili Recipe:
Ingredients:
2 Tbsp. olive oil
2 large sweet potatoes, peeled and cut into 1/2-inch pieces
1 medium yellow onion, chopped
1 red bell pepper, seeded and chopped
1 poblano pepper, seeded and chopped
4 cloves garlic, minced or 2 tablespoons minced garlic.
2 Tbsp. unsweetened cocoa powder
1 Tbsp. chili powder
2 tsp. ground cumin
Salt to taste
1 tsp. dried oregano
Ground black pepper to taste
1 can fire-roasted diced tomatoes, undrained
1 (15 oz) can black beans, drained and rinsed
1 (15-oz.) can pinto beans
3 cups vegetable broth
1/2 cup warm water
Juice of 1 lime
2 Tablespoons corn starch plus 2 TBSP water

Directions:
In a large Dutch oven or large pot, heat the oil over medium heat. Add the sweet potatoes and cook, stirring occasionally, until lightly golden, 5 to 7 minutes. Add the onion, bell pepper, and poblano.
Cook over medium heat, stirring occasionally, until softened, about 10 minutes. Stir in the garlic, cocoa powder, chili powder, cumin, salt, oregano, and pepper. Cook, stirring, for 30 seconds.

Stir in the tomatoes, black beans, pinto beans, water and vegetable broth. Bring to a boil over medium-high heat. Reduce the heat to medium-low, cover, and cook, stirring occasionally, until the flavors meld and the potatoes are tender, about 20 minutes.
Stir in lime juice. Add more salt and pepper to taste, if needed.
Mix the corn starch with the warm water and stir it into the pot. Simmer for 15 minutes more.

  2. Nice measuring spoons! Wow what a wonderful take on vegetarian chili, I love sweet potatoes. Perfect time for chili, we got snow so we have been enjoying soups and such, looks delicious 🥰🤗
