🍝 Roasted Red Pepper & Ricotta Pasta – the easiest creamy pasta
recipe you’ll make this week! Smoky roasted vegetables blended
with creamy ricotta make the most incredible sauce. Perfect for
a quick weeknight dinner that feels gourmet without the effort.

📌 INGREDIENTS:
– 2 red peppers
– 4-5 cloves of garlic
– tomatoes (cherry and roma)
– 1 carrot
– ½ cup ricotta cheese (+ more for topping)
– Fresh basil
– 2 tbsp butter
– 1 tsp tomato paste
– Red pepper flakes (+ more for topping)
– Water as needed
– 300g pasta of your choice
– Dried oregano for topping
– Salt & pepper to taste

👨‍🍳 INSTRUCTIONS:
1. Roast red peppers, garlic, tomatoes and carrot at 425°F (220°C) for 25 minutes until slightly charred.
2. Transfer roasted vegetables to a blender, add ricotta, fresh basil and a splash of water — blend until silky smooth
3. Cook pasta in salted water until al dente, reserve some pasta water
4. In a pan, melt butter over medium heat, add garlic, red pepper flakes and tomato paste — fry for 1–2 minutes until fragrant
5. Pour in the blended sauce with a splash of water and cook for 2–3 minutes, stirring occasionally
6. Toss in the cooked pasta over low heat until well coated
7. Serve topped with a dollop of ricotta, red pepper flakes, dried oregano and fresh basil
8. Enjoy immediately!
