Sometimes you just gotta get the recipe out there before you completely forget about it. Here it is:
Ingredients:
1 small onion chopped
2 boneless chicken breasts
2 15 oz can cannellini beans drained and rinsed
2 cups fresh or frozen corn
1 cup chicken broth
2 taps favorite chili powder
2 minced garlic cloves
1/2 cup sour cream
Salt and pepper to taste
1 lime juiced
2 oz cream cheese
Tortilla chips and cubed avocado for garnish
Directions:
• in insta pot add onions, garlic, beans, corn, chili powder, salt, pepper, and lay chicken on top.
• close lid and set pressure vent to seal and press pressure cook on high for 20 minutes
• After allow pressure to come down naturally for 10 minutes and release remaining pressure using Quick Release by turning pressure valve to Venting position, which takes 2 minutes.
• open lid, remove chicken and shred with 2 forks.
• return chicken to pot and add sour cream, cream cheese, and lime juice. Stir well.
• serve hot with your favorite toppings: tortilla chips, diced jalapeno, cubed avocado, or fresh cilantro.

To allow the pressure to come down naturally, do i just unplug the cooker and leave it in the sealed position?
