Winter Comfort Recipes



Back sharing some beautiful recipes with you all. I’ve got a beef chilli which I serve in a roasted sweet potato, topped with guacamole and sour cream. I’ve also got an example of a meal I cook often. Nothing beats a good plate of fish and rice.

RECIPES

Beef Chilli (4 servings)
400g beef mince
250g kidney beans
1 white onion
3/4 garlic cloves
1 red pepper
1/8 scotch bonnet
1 tbsp. tomato paste
400g plum tinned tomatoes
200ml vegetable or beef stock
1 tbsp. ground cumin
1/2 tsp. smoked paprika
1 tsp. ground coriander
1 tbsp. dried oregano
1 sprig fresh thyme
1 sprig fresh rosemary
1 tbsp. balsamic vinegar
25g dark chocolate
salt & pepper
extra virgin olive oil

Guac
avocado
fresh coriander
red onion
lime juice
chilli flakes
salt

Extras
Soured cream

Crispy seabass, lemongrass coconut rice, roasted squash & cabbage (serves 2)

Seabass:
2 sea bass fillets
20g butter
1 tbsp. capers
2 tbsp. lemon juice
1 garlic clove
15g fresh parsley
black pepper

Coconut lemongrass rice:
1 cup basmati rice
3/4 cup coconut mik
3/4 cup water
1 lemongrass stalk
salt

Cumin butternut squash:
1 small butternut squash
3/4 tbsp. cumin
salt & pepper
EVOO

1/2 purple cabbage

  2. As usual great recipes. I will try the sea bass. The chili is nice but not with beef for me. will try to use minus the beef

  3. I love a good chili! I think I’ll make it this week. I’ll have to get a couple fat sweet potatoes. I only have a 2-burner stovetop to work with so I end up steaming them. I like it mashed with a little orange juice, coconut oil, and salt. I’ll top the mash your chili recipe So delicious! ❤

  5. I'm a person that eats anything but I just can't with kidney beans/sugar beans. Traumatic memories of those beans just means I can't find it in myself to eat them. I love black beans and butter beans. Maybe because they're a choice and I learned to eat them without the bad memories
