Crispy Eggplant Fries. Recipe ↓

■ INGREDIENTS
Eggplant fries:
• eggplants – 2 medium
• olive oil – 8 tbsp
• sesame seeds – 2 tbsp
• grated parmesan – 2 tbsp
• cornstarch – 1 tbsp

Optional spices:
• smoked paprika – 1 tsp
• dried oregano – 1 tsp
• garlic powder – ½ tsp
• salt – ½ tsp (or to taste)
• black pepper – ¼ tsp

Creamy tahini sauce:
• tahini – 3 tbsp
• plain Greek yogurt – 3 tbsp
• lemon juice – ½ lemon
• garlic, minced – ¼ tsp
• cold water – 2-4 tbsp (to thin)
• salt & pepper – to taste

■ HOW TO COOK
1. Cut eggplants into fry-sized sticks (no need to peel).

2. In a large bowl, toss eggplant with olive oil, cornstarch, parmesan, sesame seeds, and all spices. Make sure everything is evenly coated.

3. Oven: preheat to 390°F (200°C), spread fries on a parchment-lined tray (single layer), bake around 15-20 min, flipping once, until golden and crispy.

4. Air fryer: cook at 390°F (200°C) for 15-18 min, shake halfway through.

5. Mix tahini, yogurt, lemon juice, garlic, salt, and pepper. Add cold water little by little until creamy and smooth.
