This video will showcase on how to make a Napa Cabbage Kimchi traditional way but in Korean Chili Paste not the powder. This recipe was suggested by my Korean boss to avoid a more spicy kimchi that can trigger my acid reflux/hyper acidity. And boom he was right I can eat loads of this kimchi without any upset stomach. Ingredients:
3kls Napa Cabbage
1/cup Kosher Salt or Table Salt
*Porridge Mixture:
2cups Water
2 Tbsp Glutinous Rice Flour
2Tbsp Brown Sugar
1 cube/pack Shrimp Seasoning (optional)
*Spices Mixture:
1 head/bulb garlic
1 ginger (around 80g)
2 large Onions (around 200g)
3 Tbsp Ginger Paste
Kimchi Sauce Mixture
*Porridge Mixture
*Spices Mixture
1 cup Korean Chili Paste
1 Tsp Fish Sauce
1 Large Carrot (around 200g) sliced
1 Large Radish (around 500g) sliced
spring onions (around 200g or more ) sliced
