Burnt Onion & Pepper Prawns | South Indian Style Prawn Fry
This is one of my favourite recipes from the Pepper Kitchen series.
The onions are sautéed till deep brown to bring a natural smokiness, the masalas build flavour slowly, and the real magic happens when freshly ground pepper is added after switching off the flame.
That final step changes the entire dish.
Prawns cook in minutes, but the taste feels rich, bold and comforting — a perfect quick South Indian seafood recipe.

Ingredients
1 onion (sliced)
½ tomato (chopped)
1 tsp ginger garlic paste
1 tsp Kashmiri chilli powder
1 tsp cumin powder
½ tsp garam masala
2 tsp freshly ground black pepper
Salt as needed
Coriander leaves
Lemon juice (optional)
Oil
Prawns

Method
1. Heat oil and sauté onions till deep brown (not black).
2. Add ginger garlic paste and cook till raw smell disappears.
3. Add tomatoes and cook till soft.
4. Add all masalas except pepper and sauté for 1–2 minutes.
5. Add prawns and mix well. Close lid and cook 2–3 minutes on low flame.
6. Open, sauté and check if cooked.
7. Switch off flame and add freshly ground pepper and coriander leaves.
8. Add lemon juice if you prefer slight tanginess.
