Method
Prep: Wash and roughly chop green chillies.
Boil: In a pan, add chopped chillies, diced potatoes/papaya, ginger, garlic, coriander seeds, sugar, salt, and water. Boil for 10-15 minutes until everything is soft.
Blend: Cool the mixture completely and blend into a smooth paste.
Finish: Return the paste to the pan. Add vinegar and green color (if using). Cook for another 5–7 minutes on low heat.
Store: Let it cool, then store in a sterilized jar in the refrigerator
