* Cube and sear off about 6-7 lb pork shoulder in batches * In leftover fat, fry off half a diced yellow onion * add 3 cloves minced garlic, 4 minced habaneros, and 6 oz tomato paste and fry off in the fat * deglaze pan with 1 cup chicken stock, 3/4 cup sambal oelek, like half the beer you are currently drinking, a few tbsp of soy sauce, and a good glug of fish sauce * add your pork shoulder back in * add a few good cracks of black pepper * 2 tbsp brown sugar * 1/2 tbsp cayenne * 1 tsp paprika * 2 bay leaves, cuz you’re not driving tonight * stir * cook in dutch oven at 275 f for 3.5 hours with lid cracked * serve over rice
It’s good, but not spicy enough. I’m going to take the 4 extra habaneros, 1/2 onion, and 3 cloves of garlic that are in my pantry. I’ll fry them up and combine with a splash of sambal oelek so that my buddy can amp up the spice. The main dish needs to be tolerable enough for regular people to eat.
