Crispy fried chicken tenders glazed in store-bought chilli oil, fresh garlic and real habanero. It’s savoury, slightly sweet, gently tangy, and then the habanero kicks in — slow, powerful, addictive.
⚠️ Warning: This recipe is seriously spicy.
Skip the habanero if you’re not ready.
I went all out with the spice level this time. Even my husband, who’s usually my official guinea pig, paused for a second… but we both kept going back for more. With hot piping rice? Next level.
This is one of those “sweating but still eating” meals.

Ingredients
Chicken
• 500 g chicken tenders, or sliced chicken breast
• 1 tsp salt
• ½ tsp white pepper
• 1 tsp light soy sauce
• 1 tsp cornstarch
For Frying
• Neutral oil, enough for shallow frying
Habanero Chilli Oil Glaze
• 2–3 tbsp store-bought chilli oil, with crispy bits
• 1 fresh habanero, very finely minced
• 2 cloves garlic, minced
• 1 tbsp honey
• 1 tsp light soy sauce, adjust to taste
• 1 tsp rice vinegar or fresh lemon juice
• 2 tbsp water
Garnish
• Fresh coriander leaves
• Toasted sesame seeds
• Spring onions, optional
• Extra sliced habanero, optional
Method
1. Marinate
In a bowl, mix chicken with salt, white pepper, soy sauce and cornstarch.
Let rest 10–15 minutes.
2. Fry
Heat neutral oil in a wok or pan over medium-high heat.
Shallow fry chicken until golden and cooked through. Do not overcrowd.
Transfer to a wire rack to drain excess oil.
Pour out the frying oil completely. Wipe the wok lightly, leaving only a thin sheen.
3. Make the Glaze
Lower heat to medium.
Add chilli oil to the wok.
Add garlic and minced habanero. Sauté gently 20–30 seconds until fragrant.
Stir in honey, soy sauce, vinegar or lemon juice, and water.
Simmer gently until slightly thick and glossy.
4. Coat
Return chicken to the wok.
Toss quickly until evenly coated.
Switch off heat once glazed to keep the edges crisp.
5. Finish
Scatter fresh coriander and sesame seeds on top.
Serve immediately.
Taste & Adjust
Too spicy → add more honey
Need brightness → extra squeeze of lemon
Want deeper savoury notes → a few drops fish sauce
Prefer thicker glaze → simmer slightly longer before adding chicken
