Day 26 of 75 Hard and I tried to make chili… it turned into bell pepper soup so I added rice and rolled with it 😅
This ended up being a cozy, low-sodium bowl that still fits my healthy goals and weight loss journey. Sometimes the best recipes are happy accidents — it doesn’t have to be perfect to be good.
