

Homemade 60/40 masa/flour tortillas with bacon fat
Carnitas – 2.5 lbs of pork shoulder cut into 3inch chunks, 1/2 sweet onion sliced, 6 crushed cloves of garlic, juice of 1 orange and throw the rinds in for braising, 1 cinnamon stick, 1 bay leaf, 1tsp cumin, 1tsp Mexican oregano, 1/2 tsp crushed coriander seed, salt and pepper liberally (I usually eye it and make sure all the meat is evenly coated)
Salsa verde – used a food processor to blend cilantro, red onion, garlic, salt/pepper, lime, and jalapeño before adding semi mashed avocado, add water until preferred viscosity is met.
