Ingredients:

Base• 1 rotisserie chicken, meat removed & chopped (skin off for lighter option) – COSTCO• 3 cups chopped romaine• 1 cup shredded kale (optional, but adds texture + nutrients)• ¼ cup thinly sliced red onion• ¼ cup shaved or finely grated parmesan

Crunch• ½ cup high-protein croutons – KOOSHYOR• ½ cup roasted chickpeas (extra fiber + crunch)

Healthy Caesar Dressing• ⅓ cup plain Greek yogurt (2% or full-fat) – FAGE• 1 tbsp olive oil – GRAZA• 1 tbsp fresh lemon juice• 1 tsp Dijon mustard• 1 tsp Worcestershire sauce• 1 small garlic clove, grated• 1–2 tbsp finely grated parmesan – TRADER JOES• Black pepper to taste• Pinch of salt• Optional: 1 tsp anchovy paste (for real Caesar flavor depth)
