Spicy Chicken Breadrolls Recipe

Last year my chicken and sweetcorn breadrolls recipe went absolutely viral (30M+ views!) so I thought I’d do another version. This year I made these spicy chicken version of breadrolls for Ramadan, perfect to make and freeze.

Filling recipe: approx makes 20
2 tbsp oil
4 garlic cloves
500g chicken, small pieces
2 tsp red pepper paste or tomato puree
1 tsp kashmiri red chilli powder
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp turmeric powder
1 tsp oregano
1 tsp onion powder
1/2 tsp black pepper
1 tsp salt, or to taste
125ml water
2 tsp cornflour
3 tbsp cream cheese
1 red pepper, finely diced
1 green pepper, finely diced
1 small red onion, finely diced
3 spring onions
2 tbsp fresh coriander, chopped

For the bread rolls:
20 bread slices
Water-flour mixture to seal
3-4 eggs with 50ml milk to coat
125g breadcrumbs
125-150g shredded mozarella (add once filling has cooled)

Heat oil in a pan and sauté the garlic until fragrant. Add the finely chopped chicken and cook until it changes colour, then stir in the red pepper paste/tomato puree, all the spices and cook for a few minutes.

Add the diced veg and a splash of water if you need and cook until softened. Then stir in the cornflour mixed with water to create a light sauce. Mix through the cream cheese/cream and fresh coriander, then leave the filling to cool completely before stirring in the mozzarella.

Trim the crusts off the bread and roll each slice thin. Spoon 1-2 tbsp of filling onto one end, seal tightly with flour and water paste.

Dip in egg mixed with milk, coat in breadcrumbs and fry for 3-4 minutes on medium heat until golden and crispy, or freeze for later. You can fry from frozen or allow to thaw for an hour first, fry for 5-6 minutes on low-medium heat.

  1. Bread so unhealthy . No make you own pastry use yogurt and flour with a 1/4 teaspoon baking powder it has to come together as pastry so use u own judgements yogurt to flour
    Rest for half hour and ut up to the required balls roll out and bake like roti

  4. Which bread did you use. I mean the brand usually whenever we roll it break. Pl. Tell any other hack. Or this batter can be use with anything else?
