1 cup Urad Dal (dry, not soaked)
1 cup Water (for mixing)
1 tsp Salt
1 tsp Crushed Ginger & Green Chili
4-5 Whole Wheat Bread Slices
Oil (for frying)
1 bowl Water (for soaking)
½ tsp Salt (for soaking water)
For Green Chutney:
1 cup Coriander Leaves
½ cup Mint Leaves
½ tsp White Salt
½ tsp Black Salt
½ tsp Roasted Cumin Powder
½ inch Ginger
2-3 Garlic Cloves
2-3 Green Chilies
1 tsp Lemon Juice
Ice-Cold Water (as needed for blending)
For Tamarind Jaggery Chutney:
30g Tamarind (soaked & strained)
50g Jaggery
¼ tsp Black Pepper Powder
½ tsp Roasted Cumin Powder
¼ tsp White Salt
¼ tsp Black Salt
½ tsp Kashmiri Red Chili Powder
10-12 Cashews (chopped)
For Yogurt Mixture:
2 cups Fresh Curd
2 tbsp Khand (unrefined sugar)
For Garnishing:
Chaat Masala
Kashmiri Red Chili Powder
Boondi
Beetroot Juliennes
