Full written recipe – Chilli Garlic Tawa Paneer Fry

Prep time: 5-10 mins (excluding soaking time of chillies)
Cooking time: 20-25 mins
Serves: 4-5 people

Ingredients:
Prep
GARLIC | लहसुन A LARGE HANDFUL
KASHMIRI RED CHILLI | कश्मीरी लाल मिर्च 15 NOS. (DESEEDED & SOAKED)
GINGER | अदरक 1 INCH
GREEN CHILLI | हरी मिर्च 3 NOS.
WATER | पानी AS REQUIRED

Paneer
OIL | तेल 1–2 TSP
PANEER | पनीर 350 GRAMS

Masala Base
OIL | तेल 2–3 TBSP
GARLIC | लहसुन 4 TBSP (CHOPPED)
RED CHILLI PASTE | लाल मिर्च पेस्ट AS PREPARED
SALT | नमक A PINCH
CURD | दही 1/3 CUP
GARAM MASALA | गरम मसाला 1/2 TSP
SPICY RED CHILLI POWDER | तीखी लाल मिर्च पाउडर 1 TSP
HOT WATER | गरम पानी AS REQUIRED
SUGAR | शक्कर A PINCH
SALT | नमक TO TASTE

Finish
FRESH CORIANDER STEMS | हरा धनिया डंठल A HANDFUL (CHOPPED)

Plating
LEMON | नींबू AS REQUIRED
CHAAT MASALA | चाट मसाला AS REQUIRED
CHEESE | चीज़ AS REQUIRED
BUTTER | मक्खन AS REQUIRED
FRESH CORIANDER | हरा धनिया AS REQUIRED

Method:
Start by preparing the chilli paste. In a mixer jar, add the soaked red chillies along with ginger, green chillies, and a little water. Grind everything into a fine, smooth paste. Transfer the paste to a bowl and keep it aside.
Now take the garlic, add it to a chopper and roughly chop it. Keep it slightly coarse so you get small bits of garlic in the masala.
Place a non-stick pan on high flame and let it heat properly. Add oil and allow it to warm up. Place the paneer slabs in the pan and fry them until both sides turn lightly golden brown. Once done, transfer them to a chopping board or a plate and let them rest for a bit.
Now place a tawa on high flame and heat it well. Add oil and let it heat properly. Once hot, add the chopped garlic and sauté briefly. Add the prepared red chilli paste along with a pinch of salt. Stir well and cook it until the raw flavour of the chilli paste reduces.
Meanwhile whisk the curd properly so there are no lumps. Add the whisked curd to the pan. Immediately add garam masala and spicy red chilli powder. Stir continuously and cook until the masala starts releasing a little oil from the sides.
Add a little hot water to adjust the consistency. Add sugar and salt to taste and mix well. Let it cook briefly and taste once to adjust the seasoning if required.
Cut the rested paneer slabs into pieces and add them to the tawa. Add chopped fresh coriander stems as well and gently toss everything so the paneer gets nicely coated with the masala. Do not cook it for too long at this stage.
Finish with freshly chopped coriander and give it a light mix.
