This is a realllllly tasty one π
SERVES 6:
24.4g protein/serve
10.9g fibre/serve
INGREDIENTS:
2 x tin chopped tomatoes
50g tomato puree
40g garlic puree
1 x red onion
3 x mixed peppers
400g Aldi veggie mince
2 tsp paprika
1 tsp cumin
1 tsp oregano
1 tsp basil
450g wholewheat pasta
800ml boiling water
METHOD:
1) Chop your onions and peppers in whichever way you’d like before adding them to your slow cooker with all the other ingredients MINUS 600ml of water and the pasta
2) Mix well and leave to cook on HIGH for 3 hours
3) Add the pasta and the remaining 600ml of water before giving it another stir and leaving to cook for another hour (it will look like a lot of liquid, don’t worry, this will be soaked up by the pasta)
4) Viola! Enjoy tonight, tomorrow night and the next π
