Argane Chutney Recipe
Ingredients
For the Chutney Base:
Dried Red Chillies: 15-20 (use a mix of spicy and Byadgi for color)
Salt: To taste
Jaggery (Gud): 2-3 tbsp (adjust based on sweetness preference)
Tamarind Pulp: 2-3 tbsp (thick extract)
Water: As needed for grinding
For the Tempering (Tadka):
Oil: 3-4 tbsp (coconut or peanut oil works best)
Garlic: 10-12 cloves (sliced or roughly crushed)
Instructions
Roast the Chillies: In a pan, dry roast the red chillies on low-medium heat until they become crisp and fragrant. Be careful not to burn them.
Initial Grind: Add the roasted chillies and salt to a mixer/grinder. Pulse until you get a coarse powder.
Create the Paste: To the chilli powder, add the jaggery, tamarind pulp, and a little water. Grind again until it forms a smooth, thick, and vibrant red paste.
Transfer: Scoop the chutney paste into a serving bowl.
Prepare the Tadka: Heat oil in a small pan. Add the sliced garlic and fry until they turn golden brown and crispy.
The Final Touch: Pour the hot garlic tempering directly over the chutney. Let it sit for a few minutes so the flavors meld together.
