I ♥️ stuffed peppers. This easy one pot recipe has all the best parts of a stuffed pepper, with less dishes.

Here’s my one portion unstuffed peppers recipe:

1 tsp olive oil
1/4 lb ground beef
1/2 medium onion, died
1 green bell pepper, diced
1/2 TBSP garlic
1/3 -1/2 c grape tomatoes, diced
Salt
Pepper
Italian seasoning
Paprika
Red pepper flake
Onion powder
Garlic powder
1/4 c dry rice
1/2 c tomato sauce
1/2-3/4 c beef broth
1/4-1/3 c shredded mozzarella

Saute ground beef in oil in medium hot pan. Once beef is cooked through, drain, remove from pan. In same pan add in onion and peppers. Saute on medium until tender, about five minutes. Add garlic, saute until fragrant, then add tomatoes and let cook for 1-2 minutes. Add in all seasonings, stir. Add in rice, toast for one minute. Then add in tomato sauce and broth. Bring to a boil. Turn down to a simmer, cover and cook 15-20 or until rice is cooked. Stir occasionally. Top with mozzarella.

  3. Im so happy i found your page. I also do not like leftovers and frquently cook for just myself. The french onion soup was the first thing i saw and now this. Yum… do you have a small batch burrito or enchilada recipie?
