Kerala Vanpayar Kaya Stir Fry | Cowpeas & Raw Plantain Easy Recipe
A simple and tasty Kerala-style stir fry made with vanpayar (cowpeas) and raw plantain (kaya). Cooked in coconut oil with shallots, garlic, curry leaves, and chilli flakes, this dish has a wonderful homemade flavor. It is a perfect side dish for rice and very easy to prepare.
Ingredients:
1 cup cowpeas (vanpayar), soaked
1 raw plantain (kaya), chopped
6–8 shallots, crushed
3 garlic cloves, crushed
2 green chillies, crushed
1 sprig curry leaves
¼ tsp turmeric powder
1 tsp chilli flakes
Salt to taste
½ cup grated coconut
2 tbsp coconut oil
Water as needed
Method:
Take 1 cup soaked cowpeas in a cooker. Add salt and enough water. Cook for 4–5 whistle. Keep aside.
Heat coconut oil in a kadai. Add crushed shallots, green chillies, garlic, and curry leaves. Sauté well.
Add turmeric powder, chilli flakes, and salt. Mix well.
Add chopped raw plantain (kaya). Add a little water, mix well, cover, and cook for a few minutes.
When the plantain is cooked and the water is absorbed, add the cooked cowpeas.
Add grated coconut and mix well.
Drizzle 1 teaspoon coconut oil on top for extra flavor.
Mix well and serve hot.
