In A Pinch? Make These Creamy Peanut-Chili Noodles For A Quick Lunch Or Dinner

*Creamy Peanut-Chili Noodles*

You’re tired, hungry, and have nothing in the fridge. Grab a couple of pantry items and whip up these delicious homemade peanut-chili noodles in less than 30 min! The noodles are tender and soft to the bite, mixed together with the creamiest sauce that make this a perfect comfort meal for a quick lunch or dinner.

_Ingredients:_

– 2½ cups flour
– ⅔ cup water
– 2½ tsp salt
– ½ cup peanut butter
– 4 Tbsp soy sauce
– 2 Tbsp chili sauce
– 2 Tbsp rice vinegar
– 2 Tbsp sesame oil
– 2 Tbsp agave syrup
– 2 cloves garlic, grated
– 1 cup leftover noodle water
– Optional: scallions and sesame seeds for topping

*1. Make the noodles*
To a large bowl, gradually mix in the room temperature water and salt to flour and knead it by hand until a smooth dough forms. Dust the countertop with flour, then roll out the dough to ⅛ inch thick and fold it over twice. Slice into ⅛-inch wide noodles and cook them in lightly salted boiling water for 8–10 minutes until tender. Reserve a little cooking water for the sauce.

*2. Make the peanut-chili sauce*
In another bowl, combine the peanut butter, soy sauce, chili sauce, rice vinegar, sesame oil, agave syrup, and grated garlic. Toss the cooked noodles directly into the peanut sauce until evenly coated. Add 2–3 ladles of noodle cooking water to loosen the sauce and create a creamy consistency.

*3. Assemble & enjoy*
Garnish with sliced green onions and sesame seeds, and enjoy!
