High Protein Cottage Cheese and Egg Bake – 40 g protein per serving

I have been laser focused on my daily protein intake for the last 6 months and this cottage cheese egg bake has been my go-to breakfast with 40 g. of protein per serving.

Here is the recipe:

14 large eggs
16 oz egg whites
1 (16 oz) cottage cheese, 2%
1 cup of shredded cheddar
8 slices of chopped baked turkey bacon
1 cup of thawed frozen spinach (or 2 cups baby spinach leaves would also work)
1 teaspoon Garlic powder
1 teaspoon Paprika 
Freshly ground black pepper

Whisk everything in a bowl until combined.
Pour it into a greased 9 by 13 casserole dish.
Bake at 350 degrees for about an 1 hour or until it is nicely browned.
Cut it into 6 pieces, eat some right away, and store the rest in the fridge for upto 5 days.
I usually warm it up for 5 minutes in my toaster oven, but if I am short on time I eat it cold to get my protein in.

  1. Ugh the dry turkey bacon looks gross 🤢 Why not use the real egg whites instead of a carton? Why not real garlic? A whole week in the fridge? No thanks.

    Suggest baking w foil over it and don’t cook the hell out of it bc it’ll be rubbery when you reheat.

  3. I make one with two eggs, half cup cootage cheese, or Greek yogurt or tofu , or sometimes I mix everything together, cheese, it can be goda, cheddar, mozzarella, 1 tablespoon of flour or two, salt and pour on a baking sheet I can top it with whatever I have , less expensive

  4. Great until you a) have no one to feed do how realistic that the quick meal would last a week for me ha ha and be I would never keep leftovers 6 days

  5. Cottage cheese in egg bakes is fantastic! It gives a delicious, rich and creamy texture. I dont like cottage cheese on its own, but in eggs it's wonderfuk!
