Sweet Potato Chili Recipe:
Ingredients
– 3-4 medium sized sweet potatoes sliced into 1-inch thick pieces
– 1 onion rough chop
– Couple cloves of garlic finely sliced
– Red & Yellow Peppers roughly chopped to same size as onions
– Coriander bunch
– Chillies
– 2 tins of kidney beans
– 2 tins of plum tomatoes
– Salt to taste throughout the recipe
– Cayenne Pepper
– Cinnamon
– Cumin
Recipe
-Slice your sweet potatoes into 1 inch bits, throw them into a tray and season with olive oil, salt, pepper, cayenne pepper, cinnamon, cumin. Mix together and throw into the oven for 40 minutes at 400 degrees Fahrenheit.
-Chop onion and throw into pan with olive oil on medium heat
-Finely slice 2 cloves of garlic and throw it in the pan
-Chop Red and Yellow Peppers and throw into pan
-Add some pinches of salt, cayenne pepper, cinnamon, cumin
-Finely slice coriander stalks and throw them in
-Finely slice your peppers, throw them in
-Throw in the Kidney beans and plum tomatoes, then fill the cans of plums tomatoes with water and pour it in.
-Let simmer for 25 minutes
-Stir in sweet potatoes
-Chop some coriander leaves and stir it into your stew
-Serve with rice and guacamole.
