🍳 Fried Egg Masala Recipe

🧂 Ingredients
4 eggs
2 tbsp oil
1 medium onion (finely chopped)
1 large tomato (finely chopped)
2 green chilies (slit)
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
½ tsp garam masala
Salt (to taste)
Fresh coriander leaves (for garnish)
Optional: 2 tbsp water for gravy

👩‍🍳 Instructions

1️⃣ Fry the eggs
Heat 1 tbsp oil in a pan.
Crack the eggs and fry them sunny-side up or slightly crisp.
Sprinkle a little salt and keep them aside.
2️⃣ Make the masala
In the same pan add remaining oil.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and cook for 30 seconds.
3️⃣ Add tomatoes and spices
Add tomatoes and cook until soft and oily.
Add turmeric, chili powder, coriander powder, and salt.
Cook the masala for 2–3 minutes.
4️⃣ Combine eggs
Place the fried eggs gently into the masala.
Add a little water if you want slight gravy.
Sprinkle garam masala.
5️⃣ Finish
Cook for another 2 minutes so eggs absorb flavor.
Garnish with fresh coriander.
