Beef Shawarma & Tzatziki Sauce. Recipe ↓
■ INGREDIENTS
Beef shawarma:
• ground beef – 14 oz (400 g)
• paprika – 1 tsp
• chili powder – 1 tsp
• black pepper – 1 tsp
• dried garlic – 1 tsp
• salt – 1 tsp
Roasted veggies:
• fresh tomatoes – 9 oz (250 g)
• red onion – to taste
• whole garlic heads – 2
• any veggies you like
Wraps:
• flatbreads (lavash, pita, or tortillas) – 2 pcs
Tzatziki sauce:
• Greek yogurt – ¾ cup (200 g)
• grated cucumber (well squeezed) – 3 tbsp
• roasted garlic – from 2 heads
• fresh dill, chopped – 1 tbsp
• fresh mint, chopped – 1 tsp
• olive oil – 2 tbsp
• lemon juice – 1 tbsp
• salt & pepper – to taste
■ HOW TO COOK:
1. Preheat oven to 392°F (200°C).
2. Place ground beef on a sheet of parchment paper. Season evenly with all spices and salt. Cover with another sheet of parchment and roll into a thin, even layer.
3. Remove the top parchment and tightly roll the meat into a log.
4. Transfer the beef roll to a baking sheet. Add tomatoes and whole garlic heads to the same tray. Lightly drizzle garlic with olive oil.
5. Bake for 35 minutes at 390°F (200°C).
Remove from the oven and let everything cool for 15 minutes.
Tzatziki sauce:
– Squeeze roasted garlic cloves out of their skins and mash into a paste.
– In a bowl, mix Greek yogurt, roasted garlic, dill, mint, grated cucumber, lemon juice, olive oil, salt, and pepper.
– Stir (or blend) until smooth and creamy. Adjust seasoning to taste.
Assemble the wraps:
– Tear or slice the cooled beef into small pieces.
– Spread tzatziki on flatbread.
– Add beef, sliced red onion, and roasted tomatoes (peel skins off if desired).
– Roll tightly and serve.
