1/4 cup Oil
1.5 inch Cinnamon
3 Cloves
3 Cardamom
1/2 cup Onion slices
1.5 tbsp Ginger garlic paste
1/2 kilo Mutton
1/3 cup Cashews
Salt
1/2 tsp Turmeric
2-2.5 tbsp Chili Powder
2 slit Green Chilies
2 cups Hot Water
2 tbsp Coriander seeds
1 tsp Cumin
10-12 Cashews
1/2 tbsp Poppy seeds
crushed Kasuri methi
1 cup Hot Water
1/2 cup Mango cubes
1/2 cup Hot Water
Coriander leaves
1/2 tsp Garam masala

    *​Ingredients:-
    ​For the Mutton Prep:
    ​Mutton: 1/2 kg (Cleaned and cut into pieces)
    ​Oil: 1/4 cup
    ​Onions: 1/2 cup (Sliced)
    ​Ginger-Garlic Paste: 1.5 tbsp
    ​Chili Powder: 2 to 2.5 tbsp
    ​Turmeric Powder: 1/2 tsp
    ​Green Chilies: 2 (Slit)
    ​Hot Water: 2 to 2.5 cups
    ​Salt: To taste
    ​Whole Spices: 1.5-inch Cinnamon, 3 Cloves, and Cardamom
    ​Fresh Herbs: Curry leaves and Coriander leaves
    ​For the Special Roast Paste:
    ​Coriander Seeds: 2 tbsp
    ​Cumin Seeds: 1 tsp
    ​Black Pepper: 1 tsp
    ​Cashews (Kaju): 10-12 pieces
    ​Poppy Seeds: 1/2 tbsp
    ​Final Finishing:
    ​Raw Mango: 1/2 cup (Peeled and cubed)
    ​Kasuri Methi: A pinch (Crushed)
    ​Garam Masala: 1/2 tsp

    ​Cooking Instructions:-
    ​Sauté Aromatics: Heat oil in a pressure cooker. Add the cinnamon, cloves, and cardamom. Add the sliced onions and curry leaves, and fry until the onions turn a light golden color.
    ​Sear the Meat: Stir in the ginger-garlic paste and sauté until fragrant. Add the mutton pieces and fry on high heat until the meat is well-charred and sealed.
    ​Pressure Cook: Add the salt, chili powder, turmeric, and slit green chilies. Mix well. Pour in 2 cups of hot water, cover the lid, and pressure cook on medium flame for 5 to 6 whistles until the mutton is tender.
    ​Prepare the Cashew Paste: While the mutton cooks, dry roast the coriander seeds, cumin, and black pepper in a pan until aromatic. Add the cashews and poppy seeds, roasting them briefly. Once cooled, grind these ingredients into a smooth, thick paste with a little water.
    ​Simmer with Mango: Release the pressure from the cooker and open the lid. Turn the heat to high and cook for 3 to 4 minutes. Add the raw mango cubes and a bit more hot water if needed. Cook until the mango cubes turn soft and slightly mushy, infusing the gravy with tanginess.
    ​Final Tempering: Stir in the prepared cashew-spice paste and cook until the gravy turns glossy and the oil begins to separate.
    ​Garnish and Serve: Add the crushed kasuri methi, fresh coriander leaves, and garam masala. Give it a final sauté to combine all flavors.
    ​Serving Suggestion: Serve this flavorful Cashew Mango Mutton Curry hot with steamed rice or pulav.
