    • 1 teaspoon smoked paprika
    • ½ teaspoon chipotle powder (or to taste)
    • ½ teaspoon cayenne (optional, for extra heat)
    • 1½ tablespoons honey or maple syrup (adjust to taste)

    Liquid
    • ½ cup chicken broth (start small — we want it thick)

    Finish
    • Salt & black pepper, to taste
    • Juice of ½ lime (optional but recommended)

    Instructions

    1. Layer the Crockpot

    Add to the crockpot:
    • Onion, bell pepper, garlic, jalapeño
    • Crushed tomatoes + tomato paste
    • Beans
    • All spices (except salt)
    • Chicken broth
    Stir well.

    2. Add the Chicken

Nestle the whole chicken thighs into the mixture.
Spoon some chili base over the top so they’re coated.

    3. Slow Cook
    • LOW: 7–8 hours (ideal for shredding + thickness)
    • HIGH: 4–5 hours

Don’t open the lid — let it build flavor.

    4. Shred & Thicken
    • Remove chicken thighs and shred with two forks.
    • Return shredded chicken to crockpot.
    • Mash about ½–1 cup of beans directly in the pot (or blend and stir back in).

    5. Sweet Heat Balance
    • Stir in honey/maple syrup.
    • Season with salt & pepper.
    • Add lime juice if using.

    6. Final Simmer

Cook uncovered for 20–30 minutes on HIGH to thicken even more.
